Fruitcake is actually quite traditional as a wedding cake, at least in England. Apparently sometimes for icing they would do marzipan which was stuck to the cake with jam and royal icing over the top.

If your mom's fruitcake isn't normally iced, maybe just run with the natural colors -- add some flowers or ribbon for decoration?

Fondant she would definitely want to practice with first, though it is lovely and smooth, but it doesn't really add anything to the taste of things, IMHO.
